Job Title: Sauce Chef
Job Mission:
To prepare authentic and high-quality Indian sauces that form the foundation of traditional and contemporary Indian dishes. The Sauce Chef will ensure consistency, flavor integrity, hygiene, and timely delivery of sauces as per the restaurant’s standards.
Principal Responsibility:
- Prepare a variety of Indian sauces (e.g., makhani, korma, tikka masala, vindaloo, curry base, etc.) using traditional and modern techniques.
- Standardize and document recipes to ensure consistent taste and texture.
- Manage mise-en-place for sauce production in line with daily requirements and menu planning.
- Maintain inventory and quality of ingredients used in sauce preparation.
- Monitor cooking procedures to ensure sauces are prepared at appropriate temperatures and durations.
- Collaborate with kitchen staff to integrate sauces effectively into various dishes.
- Ensure food safety, cleanliness, and sanitation standards in sauce preparation areas.
- Minimize waste and control portion sizes and presentation of sauces.
- Innovate and contribute to new sauce recipes for menu development.
Educational Qualifications:
- Diploma or Certification in Culinary Arts or Hotel Management preferred.
- Specialized training in Indian cuisine is an added advantage.
Knowledge and Experience:
- Minimum 3–5 years of experience in an Indian kitchen, with at least 2 years specifically handling sauce stations.
- Physical stamina to stand for long periods and handle high-temperature cooking environments.
- Flexibility to work in shifts, including weekends and holidays.
- Familiarity with health and safety standards in a commercial kitchen.
